Amazing Eggplant Tower

The Eggplant Tower: aPRUved at: only 200 calories!

  • Slice up an entire eggplant SUPER thin and put on a baking sheet (I had to use 2 sheets)
  • Drizzle with EVOO & pepper
  • Cook on 350 degrees for 30 minutes
  • Once its ready, the eggplant will look like super thin slices (they shrink a little in the oven)
  • Place a round on the plate, then take low calorie tomato sauce and put a little spoonful on top (I used Classico Tomato Basil – only 50 calories per half cup!)
  • Repeat the process (eggplant + spoonful of sauce) until you have used enough for your desired height
  • Chop up some fresh basil and sprinkle throughout
  • Add some parmesan cheese to taste

This is honestly delicious! I was so shocked but it came out amazing the first time around!
