- Slice up an entire eggplant SUPER thin and put on a baking sheet (I had to use 2 sheets)
- Drizzle with EVOO & pepper
- Cook on 350 degrees for 30 minutes
- Once its ready, the eggplant will look like super thin slices (they shrink a little in the oven)
- Place a round on the plate, then take low calorie tomato sauce and put a little spoonful on top (I used Classico Tomato Basil – only 50 calories per half cup!)
- Repeat the process (eggplant + spoonful of sauce) until you have used enough for your desired height
- Chop up some fresh basil and sprinkle throughout
- Add some parmesan cheese to taste
This is honestly delicious! I was so shocked but it came out amazing the first time around!
